So- these are a few of my old faithfuls. We eat a lot of chicken at our house. Sorry. Its not all chicken though! Somedays are easier then others but none are difficult to make.

Monday- Chicken and Rice Soup and grilled cheese sandwiches

Chicken and Rice soup. Recipe from Pinterest- Gotta love Pinterest! Super Yummy~

Ingredients-
1 Tablespoon of EVOO
1 med onion
2 garlic cloves, minced (I cheat and use the jar minced garlic)
2 med carrots cut diagonally into 1/2 inch pieces
2 stalks of celery cut into 1/2 inch pieces
4 fresh thyme sprigs
1 bay leaf
2 quarts of chicken stock or broth
1 cup of water
1 cup of long grain white rice
1 1/2 cups of shredded chicken breasts
salt and pepper

Directions-
Place a soup pot over med heat and add EVOO. Add onion, garlic, carrots, celery,thyme and bay leaf. Cook and stir for about 6 minutes until veggies are softened but not brown. Pour in broth and water. Bring to a boil. Add rice and chicken. Season with salt and pepper. Cook on med/low until rice is tender. About 30 minutes. Serve hot with cheese bread or grilled cheese sandwiches.

Tuesday- Hamburger Stroganoff and Green Beans

Hamburger Stroganoff

1 to 1/2 pounds of ground chuck
1 can of cream of mushroom
1 small container of sour cream
1 small package of baby bella mushrooms- sliced (optional)
1 small onion
package of egg noodles

Directions-
In a large skillet melt a pat of butter and sautee onion and mushrooms for about 5 minutes. Add ground chuck and brown. Drain then add soup and sour cream and salt and pepper to taste. Cook on med heat until hot then serve over cooked lightly buttered egg noodles. I serve with Allens green beans cooked in butter.

Wednesday- Angel Chicken

Angel chicken recipe from Pinterest. Cooked in a crockpot. Serve with a salad which for me is a bag of salad and a sliced cucumber and a Grainger County tomato! Pour some “homemade” Hidden Valley Ranch dressing on top and its the best simple salad ever!

Angel Chicken

4-5 skinless, boneless chicken breasts halves
1 8oz package of fresh button mushrooms, quartered
1 6 oz package od Shitake mushrooms, stems removed, caps sliced
1/4 cup of butter
10.7 oz package of dry Italian salad dressing mix
1 can of cream of mushroom
1/2 cup of dry white wine
1/2 cup of an 8 ounce tub of chive and onion cream cheese
hot cooked rice or angel hair pasta

Directions-
Melt butter in a saucepan. Add Italian dressing mix. Stir in soup, wine, and cream cheese until it is combined and is melted. Cut up mushrooms. Place mushrooms in bottom of a slow cooker. Top with Chicken. Pour sauce on top. Cook on low for 5 hours. Serve over rice or pasta.

Thursday- Hamburgers with roasted new potatoes

Thursdays I like to take a little break and let DAJ grill something. This week its going to be burgers. Simple enough. I just mix ground beef with a little steak sauce and make patties for him and let him take it from there, (not really. He actually does all the prep. I just wanted to sound important) I like mine with Pimento cheese on top but the kids usually do the traditional lettuce and tomato and mayo. SOmetimes I like to slice an Avacado and put it on top with some swiss cheese. You know how you like your burger. My recipe for roasted new potatoes is complicated so pay attention.

Roasted New potatoes-

Small bag of red potatoes
EVOO
Salt

Quarter new potatoes and spread in a pyrex dish. Drizzle EVOO on top and mix them around with your hands. Sprinkle salt on top. Bake at 400 degrees for about 30 minutes until tender. I warned you that it was complicated.

Friday- Pizza Palace (really) but Em asked for 5 recipes so I’ll pretend we are having Buttermilk Chicken with a salad

Buttermilk Chicken-
Soak 6 chicken breasts in buttermilk all day long. Mix Bisquick, salt and pepper or any other all purpose seasoning mix, and about a large handful of chopped pecans. Dredge chicken in Bisquick mixture and place in a Pyrex dish (sprayed with Pam). Melt a stick of butter and pour over the top. Bake on 350 for 45 minutes.

Theres a few Johnson family “go-to’s”. Hope you enjoy them!

She is/was/always has been my GO TO MOM FRIEND to help me realize its GONNA BE CRAZY WITH 4 kids! Its tough 2 ONLY CHILDREN GET HITCHED and have had at one point 4 kids under 5. Ummmm my childhood as ive told yall WAS a martha stewart living cover…Barbie can make some shizzz happen but she reminds me daily that she had ONE, UNO, UN…granted she always adds that her “one is a huge pain in the a$$ even as an adult” and dad always mumbles in background “why the heck do u think we had only one…we were waiting to see how that one turned out”…i cant say i disagree with him. RAINBOW CUPCAKES…not actually any “special” recipe whatsoever but do NOT THINK U CAN BAKE THEM IN THE JARS LIKE U SEE ON PINTEREST (@ cristy leonard ) yes, i know u told me so but i was soooo curious. And GAG THEY LOOKED NASTY.. So thanks to my miss cristy i knew in advance to get wide mouth mason jars or a cupcake wont fit in the jar. I used 3 diff white cake mixes just to have a variety of raw batter to eat on (ha..but it made them really tasty actually)… U will need buttloads of bowls to mix different colors in and bake individual cupcakes then put say the pink in the jar with a dallup (mary lawson loved that word she couldnt stop saying it when she heard me say it:))…*note:canned frosting secret from my mother in law and it makes it not taste like canned frosting. Put it in a huge bowl (i also use a few diff icings amd mox together but my fave is duncan hines WHIPPED;)…BUT PUT A COUPLE BIG CANS IN BIG BOWL OR IN KITCHEN AID MIXER BOWL AND WHIP THE DAYLIGHTS OUT OF IT AND I SWEAR TO U it wont evenlook or taste like the same frosting! Soooo creamy, frothy and YUMMO!….THEN U GET YOUR “dallup” and drop it on the pink cupcake..then grab your next color cucake and drop in jar and smoosh it down…get a dallup of frosting u just whipped the crap out of and repeat…when all colors in add one last BIG DALLUP OF ICING AND SOME SPRINKLES AND VOILA!!! U now are easily able to convince yourself u r merely eating A DESSERT when actually U ARE ABOUT TO EAT ALL 12 cupcakes (little exaggerated there:/) u just smashed into A SINGLE JAR. ENJOY! And YES, i ate the whole dang thing myself so YOU SHOULD TOO:):). Little pre-pms present and it ROCKED!!!

Better than Sex Cake

Uhhhh. Ahhhhh. JUST KIDDIN;). Im warped. Yea i know! Cake that’s better than sex to be exact! Nahhhh, i DONT think its better than sex but im also 35 (you know what they say about women in their 30′s…i think it may be TRUE:))…But this cake is pretty DA-AMN GOOD. Just not quite “orgasmically good”. Bahaha. SORRY THAT WAS KINDA GROSS.

This cake is divine. Lusciously divine. Rich chocolate cake, drenched in caramel sauce, chocolate covered toffee and whipped cream! Ooooh yeah : )

BETTER THAN SEX CAKE

Recipe from: allrecipes.com

1 (18.25 oz) package Devil’s food cake mix (and the eggs, oil and water it calls for)

1/2 can (14 oz) Sweetened Condensed milk

6 oz Caramel Sauce

3 Chocolate covered Toffee candy bars ( I used Skors)

1 (8 oz) container frozen Cool-Whip, thawed

Directions: Bake cake according to package directions for a 9×13 baking dish. Remove from oven and let sit for 5 minutes. Using a fork, polk holes all over the cake.

Pour the caramel sauce evenly all over the top of the cake. Then pour only half of the can of sweetened condensed milk evenly over the top of the cake. Chop up one of the candy bars, and sprinkle evenly on top. Place cake in refrigerator and let chill for a few hours to cool completely.

Remove cake from refrigerator, and spread the thawed cool-whip evenly over the top. Chop up the remaining two candy bars, and then sprinkle evenly over the entire cake. Serve!
