For the month of February 25% of the proceeds from the following products will be donated to Hutton’s Heart to benefit “Project Adam”. Project Adam is a benefit to put defibrillators into area schools and as a mother of an athlete that will be attending Catholic High School, I am happy to report they have received the first one! WOO HOO. Anyway, great cause and we’re always happy to help our very own little special BABY HUTTON JOHNSON…I am also happy to report that since receiving her new heart there have been some ups and downs but little Hutt and her new heart are doing great and sassy and as “DAVID JOHNSONISH” as she can be…I personally think she should have been named “Daveta”! She is going to be R-O-T-T-E-N (and they will even admit it=)!). As always, we appreciate all of you keeping our little buddy in your thoughts and prayers that she continues to ROCK her new heart for many years to come! She is one amazing little gal…have to bite my lip as i type this bc OMGAHHH she is soooo freakin’ CUTE and FUNNY…her personality CRACKS ME UP!!! The child is resilient. Amazingly resilient! She has SOMETHING she is SUPPOSED to be doing here on this crazy earth!!! I have NO DOUBTS she will figure it out and make it happen whatever it may be! NEVER DOUBT THE POWER OF HUTT! lol. (ask the docs at CHOP…many of them had to learn the hard way…haha)

NOTE: not meaning that AT ALL offensive to all the AMAZING doctors there…it’s just that Hutton seems to be a little more amazing than Science and medicine…really a walking miracle made possible only by those AMAZING DOCS she proved wrong!

Ok…so as promised here are MY CAMERA BAGS that I LOVE:)!
a)EPIPHANIE “Ginger” bag…this is my FAVE for most regular usage! I toss my iPhone, cc, lipstick & drivers license in front pocket and ditch the purse and carry my paparazzi lenses undercover to my boys sporting events! Looks just like a hip purse!;)…and MY camera bag is pretty dang full..fisheye lens and a couple others go everywhere I go!! Along with my flash too. So it’s roomy enough for some extra photo toys! AND well…it ROCKS!

love it for those days I drag my 4 kids out somewhere (like the graveyard shoot last Halloween this would’ve been handy)…I switch lenses like a crazy woman. Some shots I see with one lens then 2 seconds later I see a “portraity” shot forming amongst one or all of my kids and need to switch to the zoom. This bag help me NOT MISS A SHOT AND LET’S ME BE ABLE TO SHOOT HOW I SEE FIT-regarding lenses;)! The material keeps your lenses safe without lens caps and all while your in the thick of it! Very nice addition for avid lens switchin’ photogramomma like MYSELF;)!!! I of course have a couple of the bright and fun bag flaps. (pics to follow).

C)my Jill-E bag. This is my big ole carry all my photoshiznit with me bag! Very snazzy leather and adjustable padding to fit your camera toys’ needs! I do however find this one a tad too bulky to use as an everyday bag!but this is the one I take on trips to the beach or anywhere I take an extra camera or need LOTS of lens choices! Def a beach/family vacay kinda camera bag! But the looks of it might actually be my fave. I think. Hmmm. Wait depends on the day and what I’m wearing I guess. But you can’t go wrong with any of these BAD BOYS!;)

….and OH SO HOT HE WILL BE! LOLOL..OK..so we looked everywhere..all we found were ebay that looked like it could arrive in a plastic bag with a handle and a cardboard photo in the front..you know like when you order your halloween costumes from an expensive catalog and get them in the same packaging as PARTY CITY COSTUMES! yep, we all know what i mean! it sux..total bummer. in fact i think that happened to me THIS YEAR!=)….sooooo we didnt wanna mess with that…it was HARD and time consuming but i eventually got it after making rounds to kmart/the mall/walmart/etc! here is the LOW DOWN ON THE COUSIN EDDIE GARB THAT I THINK I NAILED FOR MY HUBBY!: (NOTE: WE HAVE BEEN ON THIS MISSION FOR SEVERAL YEARS SOOOO I KNOW THIS IS THE BEST BET BUT IT ACTUALLY WORKED GREAT!.EVEN SOME OF THE SHOES W/OUTFITS ON EBAY DONT EVEN LOOK CLOSE TO IT…ITS LIKE THEYVE PAIRED NURSING SHOES WITH IT JUST BC THEY ARE WHITE! not gonna work for my picky butt!!! ok…off my soapbox and breaking it down for you:

How to make it


  • Preheat oven to 375
  • In an electric mixer, cream together butter and sugars. Add vanilla and eggs. Mix well.
  • In a separate bowl, combine dry ingredients, except the last three add ins. Slowly add the dry ingredients to the wet and mix until combined. Add in the chocolate, graham crackers, and marshmallows.
  • Scoop with a tablespoon or medium disher (aka ice cream scoop) and roll dough into balls. Place on a parchment or wax paper lined baking sheet 2 inches apart. Bake for 9 – 11 minutes or until the sides and tops just start to turn golden brown.
  • Makes 2 – 3 dozen large cookies.
  • Things to note about this recipe: First, this batch is HUGE. I have a Kitchenaide stand mixer and the bowl was nearly over flowing. I think next time, I may do only half of this amount. Secondly, I may just poke the marshmallows into the top of the cookies next time. The ones that came in direct contact with the cookie sheet turned into hard caramel. (I should have KNOWN that, but I wasn’t thinking about that fact that marshmallows are basically solid sugar, and when sugar hits 375 degrees, crazy things can happen) I destroyed like 5 cookies trying to remove them from the sheet. Oh well, the ugly ones are treats for the chef. :)

Here is my contribution for family friendly recipes!

Day 1 – Parmesan Chicken and Lemon Vinaigrette
Ingredients for Chicken
4-6 boneless, skinless chicken breasts
1 cup all-purpose flour
1 teaspoon Kosher salt
1/2 freshly ground black pepper
2 extra-large eggs
1 tablespoon water
Unsalted butter
1 1/4 cups seasoned dry bread crumbs (I use Panko bread crumbs)
1/2 cup freshly grated Parmesan
Ingredient for Lemon Vinaigrette
Salad greens for 6
1/4 cup freshly squeezed lemon juice (2 lemons)
1/2 cup olive oil
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
Directions for chicken
Pound the chicken breasts until they are 1/4 inch thick using a meat mallet or rolling pin.
Combine flour, salt and pepper on a dinner plate.  On a second plate, beat the eggs with 1 tablespoon of water.  On a third plate, combine the bread crumbs and 1/2 cup grated Parmesan.  Coat the chicken breasts on both sides with the flour mixture, then dip both sides into the egg mixture and dredge both sides in the bread crumb mixture.
Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large saute pan and cook 2 or 3 chicken breasts on medium-low heat for 2-3 minutes on each side, until cooked through.  Add more butter and oil and cook the rest of the chicken.
Direction for Salad
In a small bowl, whisk together the lemon juice, olive oil, salt and pepper.
Toss the salad greens with lemon vinaigrette.  Place a mound of salad on each hot chicken breast.  Serve with extra grated Parmesan
Day 2 – Sausage and Pepper Pasta

Ingredients
3 tablespoon of Olive Oil
3 garlic cloves, minced
1 1/2 pounds hot or sweet Italian sausage, cut into 1-inch pieces
1 large green or yellow bell pepper, cut into strips
1 large red bell pepper, cut into strips
1 large onion, sliced
1 14 1/2 ounce can tomatoes, diced, juices reserved
1 tablespoon dried basil
1 teaspoon dried oregano
salt and pepper
1 pound penne pasta, cooked
Grated Parmesan
Directions
Heat oil in heave large skillet over medium heat.  Add garlic and saute until golden, about 1 minute.  Mix in sausage and cook until brown, about 8 minutes.  Add peppers and onion and cook until almost tender, stirring occasionally, about 5 minutes.  Mix in tomatoes with juices, basil and oregano.  Season with salt and pepper.  cover and simmer for 8 more minutes.  Uncover and cook 2 minutes.  pour over pasta and toss.  Serve with grated Parmesan.  Serves 4-6 people.
Day 3 – Salami pasta salad

Ingredients
12 ounces tri-color rotini pasta, cooked and cooled
1 can medium olives, drained
8 ounces mozzarella cheese, fresh or brick cubed, or feta cheese crumbled
4 ounces salami, sliced into ribbons or cubed
2-3 grape tomatoes halved
1/3 cup sliced green onions
fresh basil
5 tablespoons olive oil
4 tablespoons balsamic vinegas
1 teapsoon salt
6oz can of marinated artichokes
Directions
Combine all ingredients in large bowl and toss!
Day 4 – Stuffed peppers (crock pot)

Ingredients
4 Large bell peppers, whatever color you want
1lb ground beef
1/4 cup onion
1 1/2 cups of cooked rice
1 jar of spaghetti sauce
salt, pepper or whatever you like to season your beef with.
Directions
Season and brown the ground beef on stove.  Mix beef, onion and rice in large bowl.  Cut tops off the 4 pepper and hollow out any seeds.  Stuff the peppers with equal portions of the ground beef mixture.  Place stuffed peppers in Crock Pot and cover with Spaghetti sauce.  Cover and cook on low for 6-7 hours or until beef is cooked through and pepper is tender.
Day 5 – Meatloaf

Ingredients
1 1/2 lbs of ground sirloin
2 eggs, beaten
2 tsp of salt
1 cup of saltine crackers, crushed (about 18 crackers) (i usually crush them in the blender)
1/4 tsp black pepper
1 tsp yellow mustard
2 cups ketchup
Mix together and baked in a pan on 350 degrees for 1 hour.
Day 6 – Slow Cooker Italian Chicken with noodles
Easiest recipe ever!  Being a work out of the home mom, I love slow cooker recipes!
Ingredients
1 1/2 pounds boneless skinless chicken thighs or breasts
1 can (14 1/2 ounces) reduced sodium chicken broth
1 can (14 1/2 ounces) diced tomatoes, undrained
1 1/2 cups thinly sliced carrots
1 large onion, thinly sliced and separated into rings
3 cups uncooked no yolk egg noodles
3/4 cup frozen peas
Directions
1. Place chicken in bottom of slow cooker.

2. Pour chicken broth, tomatoes, thyme, oregano, carrots and onions on top of chicken.

3. Cover and cook 8 hours on LOW or 4 hours on HIGH. Stir in noodles and peas. Cover and Cook 15 to 20 minutes on HIGH or just until noodles are tender.

YUMMO! THESE LOOK GREAT AND FALLISH! THX REGINA! XOXO-Em….

Here is my 3rd attempt! lol!! I’m hoping that maybe you’ll get so annoyed by seeing my name that you’ll just pick mine to make me stop sending recipes!! But seriously, these are really good recipes….a couple I sent you before, but, trust me…they are so YUMMY! Here goes…..

3 Bean Stew (my mom got this recipe from the chef at a restaurant she was in in Tennessee! SOOOOOO good!)

1-1 1/2 lbs. ground beef
1 lb. Polish sausage
1 large 28 oz. can tomato sauce
1 19 oz. can white kidney beans (undrained)
1 19 oz. can red kidney beans (undrained)
Brown sugar to taste
1 15 oz. can lima beans (drained)
salt and pepper to taste

In large saucepan brown beef and polish sausage. When brown, add tomato sauce, red kidney beans, white kidney beans (both undrained), lima beans (drained), sugar, salt, and pepper.

Cook over low heat for about 1 hour or more until thick. Keep cover on half way. Serve with corn bread.

Spaghetti and Meatball Stoup (thicker than soup, thinner than stew)

2 Tbls oil
1 carrot, peeled and diced
1 medium yellow onion, chopped
2 small celery sticks, chopped
3 cloves garlic
3 cups tomato sauce
3 cups chicken broth
1 lb. ground beef or turkey
1/2 cup grated cheese (Parmesan or Romano, or a mixture of both)
1/2 cup seasoned bread crumbs
1 egg, beaten
parsley
1/2 lb. spaghetti, broken in half
1 cup fresh basil leaves, torn or shredded – - or about 3 Tbls dried (I always use dried)

Preheat a medium soup pot over medium heat. Add oil, carrots, onions, celery, garlic, and saute 5 minutes. Add tomato sauce and broth and cover pot. Turn up heat and bring to fast boil.

While soup comes to a boil, mix the ground meat with cheese, bread crumbs, egg, and parsley. Roll into 1 1/2 – 2 inch balls.

Add meatballs, bring back to a boil then stir in the spaghetti. Reduce the heat and simmer 10 minutes more, until spaghetti is tender and meatballs are cooked through. Stir in basil and remove from heat. I usually serve with crusty Italian bread for dunking, or even Pillsbury Italian bread (in the can!) and Parmesan cheese.


Salisbury Steak with Mushroom Gravy

1 1/4 lbs ground beef
1 Tbls worcestershire sauce
1 small onion – chopped small
1 Tbls Montreal seasoning (leave out and season to taste if your kids don’t like spicy…it’s not too much, my kids don’t seem to notice)
3 Tbsp oil
1 lg can sliced mushrooms
2 Tbls margarine
2 Tbls flour
2 cups beef stock

Combine meat, worcestershire, onion, & steak seasoning. Form 2 large, oval patties…1 inch thick.
Preheat large skillet over medium high heat. Add a Tbsp. of oil & the meat patties to a hot pan. Cook meat 6 minutes on each side until meat is evenly caramelized on the outside and juices run clear.
Remove meat and cover with loose tin foil to keep warm. Add 1 more Tbsp. oil and margarine to the pan, then the mushrooms. Season mushrooms with salt and pepper and saute mushrooms until tender-3 to 5 minutes.
Add a sprinkle of flour to mushroom pan and cook 2 mins more. Whisk in stock and thicken 1 minute. Serve with gravy on top.
(Honestly, my kids don’t like mushrooms….but they LOVE this gravy…I just take out the mushrooms for them.) I usually serve with mashed potatoes and corn and it feels like an old school TV dinner – - just add brownie!


Chicken and stuffing

4 skinless, boneless chicken breasts
about 8 oz. Stove Top chicken stuffing
2 or 3 cans chicken gravy

Cut and/or pound chicken breast into thin pieces. Spread a thin layer of stuffing on each piece of chicken, roll it up, put tooth pick in to hold. Place chicken in a lightly greased baking dish and cook in a 350 degree oven for 20 – 30 minutes.

When chicken is cooked, heat the gravy in a sauce pan. When serving, pour gravy over chicken.

Pork chops and noodles – (this is super easy and the pork chops don’t come out dry)

4 – 6 pork chops
oil
1 can Campbells Golden Mushroom soup or Tomato soup
1 can water
Salt, pepper, Italian seasoning to taste
1 12 oz. or 16 oz. bag of medium egg noodles

In a large saute pan, over medium to high heat, brown both sides of pork chops in oil until golden brown (to seal in juices).

Boil water for noodles and cook as directed on package. Drain.

Put noodles in a lightly greased baking dish. Arrange pork chops over the noodles. In a separate bowl/measuring cup mix sauce and seasonings with the water. Pour over pork chops and noodles. If you want, throw frozen peas in here and you have all bases covered!

Bake in a 350 degree oven for about 35 minutes.


Down Home Macaroni and Cheese

1/4 cup margarine, divided
1/4 cup flour
1 cup milk
1/2 lb. (8 oz) Velveeta, cut up
2 cups (8 oz) elbow macaroni, cooked, drained
1/2 cup shredded cheddar cheese
1/4 cup crushed Ritz crackers

Preheat oven to 350. Melt 3 tablespoons of the margarine in medium saucepan on low heat. Add flour: mix well. Cook 2 minutes, stirring constantly. Gradually add milk, stirring until well blended. Cook on medium heat until mixture boils and thickens, stirring constantly. Add Velveeta, cook until melted, stirring frequently.

Add macaroni; mix lightly. Spoon into lightly greased 2 Qt. casserole dish; sprinkle with shredded cheese. Melt remaining 1 TBLS. margarine; toss with cracker crumbs. Sprinkle over casserole.

Bake 20 minutes or until heated through.
